  • 2 cups of vegetable oil
  • 3 large eggs

To make a delicious carrot cake, first of all, preheat the oven up to 350 degrees F. Now take a large bowl and mix flour, baking powder, baking soda, salt to taste and cinnamon. Furthermore, take another bowl beat 3 large eggs, white sugar, vegetable oil and 2 teaspoons of vanilla. Now stir all the mixture all together in a large bowl including carrots and pecans.

Pour the batter into a 9*13 inch pan gently. Finally, bake the cake for 40 minutes and see whether the turns out clean. After it is well baked let it cool for 10-15 minutes. Now you need to prepare for frosting. take a medium bowl and add confectioner's sugar, cream cheese, butter, and finally 1 teaspoon vanilla. Stir the mixture until it turns out smooth. Add some chopped pecans for frosting.

Ingredients:

  • 2 cups cake flour
  • 1 spoon baking powder
  • Salt to taste
  • A half cup vegetable oil
  • 5-6 eggs
  • 1 and a half cup crushed sugar
  • 2-3 teaspoon lemon juice
  • 3 cups cold water
  • 1-2 teaspoon of lemon peel crushed
  • 1 teaspoon cream tarter

For Frosting:

  • 3-4 tablespoon crushed white sugar
  • 3 tablespoon lemon curd
  • 2 tablespoon whipping cream

Preparation:

First of all, take a medium bowl and mix lemon juice, lemon peel, water and six egg yolks, and oil together. Take another bowl and mix cake flour, a cup of sugar, baking powder as well as salt. Now mix both the bowl ingredients in one place and stir to make a smooth paste.

Now you will need an electric mixture to mix egg whites, tarter cream until they turn light and foamy. Also, add a little sugar in an electric mixture. Finally, you are done with mixing. Now let us divide the batter into three sections pouring in 3 cake pans. For about 60 minutes, you must bake the cake in 350 degrees F.

When it is done let the cool for 10-15 minutes. Slowly arrange the cake into layers for example place the first layer and spread a half cup of lemon curd gently. Again place another layer on top of it and spread lemon curd. In this way place the third layer and now it is the time for frosting. For ice frosting, mix cream and sugar properly by adding lemon curd. let it get cooled in the refrigerator for some time. Frost the top of the cake and refrigerate, enjoy the yummy lemon cake.


7. Soft Pink Raspberry Cake

Lovely, this is a mother's day special cake. In fact, the color along with the decoration and texture looks perfect for gifting your mother.   • 250g cake all-purpose flour
  • 200-250g butter
  • 250g powdered sugar
  • 1 tablespoon vanilla extract
  • 3-4 large eggs

For Icing:

  • 150g powdered sugar
  • 1 tablespoon vanilla extract
  • 300g icing sugar
  • 100-150g raspberries

For Decoration:

  • 100g fresh pink raspberries
  • Raspberry jam as much as needed.

Preparation:

To prepare lovely pink raspberry cake, grease 2*9 inch cake tins with a flour. Now with an electric mixture, whip stork butter, and caster sugar until it's light brown. Furthermore, add vanilla extract. Now start beating all the large eggs in the mixture. Add all-purpose flour to the mixture and blend well. Gently pour the mixture into two cake tins equally and bake it for 30-45 minutes in an oven at 350 degrees.

Finally, when it is fluffy and brown, take it out from the tin and shift the cake in a wire rack to cooled down. Now separate the cakes into two equal circles and spread raspberry jam on top of the other.

For icing, add icing sugar, vanilla, and cream in an electric mixture. Apart of that, you need to heat it with this electric mixture until it turns out smooth. Spread the vanilla icing at the top of the cake. Sprinkle some crushed sugar at the top for pretty looks of the raspberry cake. Finally, the raspberry cake recipes are ready. 8. Mango Cake

Mangoes are one of my favorite and this summer it is a mango season. You can try mango cake if you can get many mangoes. They are sweet rich as well as yummy. The color of the ripe mangoes also looks awesome. During my week off, I really like to make this yummy mango cake for my family.

For icing add vanilla extract, cream cheese, butter, powdered sugar and mix them properly. Now spread over the cake layers. Now chop some mangoes into slices and create beautiful toppings. Now slice the cake with a knife into two. To prepare the icing, add cream, icing sugar in an electric beater. Therefore, before you spread the icing, remember to refrigerate it for a day.
