Instructions to prepare:

  • After cutting the chicken into medium chunks, sprinkle salt and black pepper.
  • Cook the chicken for about 25 to 30 minutes after heating the palm oil in a large saucepan and stir it occasionally.
  • Take cashew nuts, coriander, ginger, garlic, dry shrimp and peanuts in a blender and blend it into a paste. Add this paste to the chicken.

Place the medium size prawns and cook till it becomes light pink in color. After that put the vegetable stock, coconut milk, red chili, salt, pepper, paprika, and coriander. Cook it for another additional 5 minutes and stir it gently.

  • Put it back in the oven and cook for another 15 minutes.

  • Put the black beans in a small saucepan and cover it with cold water. Boil it for 2 minutes then remove it from heat. Cover it and let it stand for 1 hour after that drain the beans.
  • Cook the bacon in big skillet on a medium heat until it becomes crispy after that remove the bacon from the pan.
  • 1/8 tsp of salt and 1/4 of pepper over the pork evenly.
  • Increase heat to medium and put the pork and cook for 8 minutes in the dripping of skillet. Cook till all the sides of the pork turns brown in color.
  • Now transfer the pork to an electric slow cooker.
  • Take 1/8 tsp of salt and 1/4 of pepper and sprinkle evenly over the ribs and cook it till the color turns brown on all sides of the ribs. Then transfer it again to an electric slow cooker.
  • Now add all the remaining 3 ingredients along with onion and 1/2 tsp of salt to the slow cooker and stir it to combine. Cover and cook it until the meat and the beans are tender.
  • Remove the meat from the bones and put the meat back to the slow cooker. Now sterilize it vinegar and crumble bacon.
  • Serve with rice and orange wedges.
